Labskaus!

Labskaus is a potato dish with beef and beetroot that has its origins in seafaring and is popular throughout northern Germany.

Ingredients for 4 People

  • 800 g potatoes  
  • Salt   
  • 2 onions  
  • 1 jar (370 ml) gherkins   
  • 1 jar (370 ml) beetroot   
  • 4 pickled herrings   
  • 3 tablespoons of butter or margarine   
  • 2 cans (à 340 g) corned beef                    
  • Pepper   
  • Ground allspice
  • 4 eggs (medium)
Labskaus!

Preparation (about 40 minutes)

  1. Peel, wash and halve the potatoes, then cook in boiling salted water for about 20 minutes. Peel and dice onions. Drain gherkins and beetroot separately, saving liquid. Slice both into fine cubes.
  2. Halve the pickled herrings. Heat 2 tablespoons of butter, lightly frying onions. Roughly dice corned beef, add to onions and sauté for about 2 minutes. Season generously with salt, pepper and allspice.
  3. Drain potatoes and mash to purée. Add corned beef, 4-6 tablespoons of beetroot juice and 2-4 tablespoons of gherkin juice, then mix together. Meanwhile, heat 1 tablespoon of butter in a large skillet and fry 4 eggs.
  4. Season with salt. Arrange cucumbers, beetroot, pickled herrings, labskaus and a fried egg on each plate.
